What are benefits of tofu?

Tofu is a bean curd made from soy beans, a plant source of protein. It has been a staple of the Asian diet for centuries. It has little to no taste of it's own and is good at taking on flavors of whatever spices, sauces and seasonings are used in preparation. It can be stir fried, deep fried, baked, blended in a smoothie or simply eaten chilled with a ginger soy dipping sauce.
